There are two bad answers to this question. “Buy organic whenever you can afford it” ignores that on some foods the difference is close to zero. “Organic is a marketing scam” ignores that on others the measured gap is enormous.
The useful answer requires three inputs, and most articles only use one.
The three things that decide it
1. How large is the measured gap? Comparing organic and conventional sample sets for the same crop, how far apart do they actually sit? On strawberries, conventional samples index 87 out of 100 on relative residue evidence against 17 for organic — a 70-point gap. On avocados, conventional indexes 1 and organic indexes 0. There is nothing to buy.
2. How often do you eat it? A 70-point gap on a fruit you buy twice a summer matters less than a 58-point gap on something you eat five days a week. This is why apples rank above nectarines on the foods worth buying organic list despite indexing lower on raw residue evidence — Americans eat apples constantly.
3. How good is the data? Organic sample sets are routinely an order of magnitude smaller than conventional ones. A commodity with 44 organic samples can swing several points on a handful of results. Where confidence is limited, the recommendation should be weighted down — and where there is no organic sample set at all, no recommendation should be made.
Multiply the first two, discount by the third, and you get a priority score. That is what this site ranks on.
The short list: prioritize organic
These are the foods where the gap is large and you probably eat them often:
- Spinach — index 92 conventional against 13 organic. The highest in the database.
- Grapes — 88 against 15. More distinct residues per sample than almost anything else.
- Kale — 81 against 12.
- Strawberries — 87 against 17. Nearly every conventional sample shows a detection.
- Apples — 69 against 11, and eaten more often than anything else on this list.
- Peaches — 81 against 14.
- Celery — 62 against 8.
- Potatoes — 52 against 6, and eaten in volume.
Every one of these is either a leafy green with enormous surface area, or a thin-skinned fruit eaten whole.
The other short list: conventional is fine
- Avocados — index 1. Around one conventional sample in fifty shows any detection.
- Sweet corn — index 1. The husk does the work.
- Onions and garlic — 5 and 4. Chemical self-defence plus discarded outer layers.
- Asparagus — 4. Grows faster than most spray schedules.
- Pineapple, mango, watermelon — 7, 10, 10. All peeled.
- Kiwi, cabbage — 13 each.
- Broccoli, cauliflower — 18 and 16, with nutrient-density scores in the high seventies and eighties.
Buying organic here is not wrong. It just does not do much for residue, and the same money moves the needle further on greens.
The middle, and what to do about it
Blueberries, tomatoes, bell peppers, green beans, cucumbers, and romaine sit in between. They are worth upgrading when the budget stretches and worth skipping when it does not.
Three tactics get you the upgrade cheaply:
- Buy frozen organic. Organic frozen berries usually cost less per serving than conventional fresh out of season, and freezing happens within hours of picking.
- Swap the crop. Cabbage delivers similar cruciferous compounds to kale at roughly a quarter of the price and a fraction of the residue evidence.
- Upgrade where the premium is small. Bananas, carrots, and oats carry some of the smallest absolute premiums in the store.
What organic certification actually buys
Certified organic prohibits most synthetic pesticides but permits a defined list of approved substances, and it does not prevent drift from neighbouring farms or persistence of compounds banned decades ago. That is why organic samples show detections at all rather than a clean zero.
On non-produce items the label buys something different again. On eggs it certifies feed and outdoor access — not yolk colour or omega-3 content. On chicken it certifies feed and no antibiotics; hormones are already prohibited in all U.S. poultry, so “hormone-free” on a chicken label is marketing. On soy and corn products it is the practical way to avoid genetically engineered inputs, which is a values question rather than a residue one.
