Organic produce costs somewhere between 20% and 60% more than conventional, depending on the crop. Whether that is worth paying depends on what you are buying it for — and there are three separate reasons people buy organic, which get tangled together constantly.
Reason one: lower pesticide residue
This one is measurable, and the answer varies enormously by food.
Across commodities with paired organic and conventional sample sets, organic samples typically index at roughly a fifth of the conventional figure on relative residue evidence. But the absolute size of that reduction is what matters for your money:

Paying a 50% premium to close a 79-point gap is a different transaction from paying it to close a 1-point gap. Same label, same percentage premium, wildly different value.
Reason two: farming practice
Organic certification restricts synthetic inputs, requires specific soil and rotation practices, and — for livestock — sets feed and outdoor access standards. If you are buying organic because you want to support that production system, the residue numbers are beside the point. That is a values purchase, and it is a coherent one.
Worth knowing what it does and does not cover: organic permits a defined list of approved pesticides rather than none at all, does not prevent drift from neighbouring farms, and says nothing about carbon footprint, water use, or worker conditions, all of which vary independently.
Reason three: nutrition
This is the weakest of the three arguments. Nutrient differences between organic and conventional produce are small and inconsistent — some studies find modestly higher polyphenols in organic crops, others find nothing, and the effect sizes are dwarfed by variety, ripeness, storage time, and season.
Anyone deciding whether to buy organic on nutrition grounds is optimising a rounding error while a much larger term sits untouched: whether the vegetable gets eaten at all.
The cost-per-change calculation
If you want a number rather than a principle, the calculation is straightforward:
- Take the measured residue gap for the food.
- Multiply by how many servings a week you eat.
- Divide by the extra dollars per week the organic version costs.
That gives you priority points per dollar, and it produces a clear spending order. On a typical two-person list, the first $15 of organic budget buys most of the available reduction — because it goes to greens, which are cheap to upgrade and eaten often. The next $15 buys much less.

When the answer is clearly no
- The food is peeled before eating and indexes in single digits — avocados, pineapple, mango, onions, sweet corn.
- The organic version costs more than double and you eat it rarely.
- Buying organic would mean buying less produce overall. This is the important one: the evidence that eating more fruit and vegetables improves health outcomes is strong and consistent. The evidence that residues at typical U.S. levels cause harm is not. Trading volume for a label is a bad exchange.
When the answer is clearly yes
- You eat leafy greens several times a week. Spinach, kale, and romaine are the highest-return upgrades in the store, and the premium on a $3.29 box of spinach is $1.20.
- You are buying the food for a young child who eats the same three things every day, concentrating whatever exposure exists.
- The premium is small in absolute terms — bananas, carrots, oats — and you would rather not think about it.
The honest summary
For most households, spending $10–20 a week on organic, allocated by measured return, captures nearly all the available residue reduction. Spending nothing is a defensible choice, especially against the alternative of buying less produce. Spending $60 to upgrade an entire list buys progressively less with each dollar, which is worth knowing before you commit to it.
