How to wash broccoli

Soak florets head-down in cool water for a couple of minutes, then rinse. The canopy traps grit and the occasional aphid that a surface rinse will not dislodge.

  • Steaming for three to four minutes preserves far more sulforaphane than boiling, which leaches the precursors into the water.
  • The stalk is as nutritious as the florets and costs you nothing — peel the tough outer layer and slice it into coins.
